YOTSUBA Cleaver Knife 7"– High Carbon Steel Vegetable & Meat Knife

The YOTSUBA cleaver is a very well made, comfortable to use, and efficient kitchen utensil. It is extremely sharp, though I don��t think I��ll try slicing tomatoes with it as pictured in the AMAZON item description. The cleaver is not only attractive but extremely durable thanks to its German steel composition. I also especially like the full-tang construction which helps ensure this cleaver can handle the toughest cutting jobs in the kitchen. The rosewood handle is well done and without obvious rivets that I find cheapen the look of some cutlery.

I tested the cleaver on a variety of jobs after unboxing it upon arrival (I must mention here too that this cleaver is boxed very well and suitable for gift giving such as a wedding or housewarming gift). I first used the cleaver on some semi-frozen chicken quarters where I needed to separate the pieces into legs and thighs. The cleaver made short work of this task and without a lot of effort on my part. I washed it up and then cut up some cabbage and onions needed for our meal. My final test was to cut up for freezing a large piece of smoked ham hock I had picked up for seasoning beans. Again, the cleaver performed far superior and more efficient than my normal chef��s knife I would have used for the task.

Overall, I am extremely happy with this order as it is a lot more than I expected at its current price point of $60 on AMAZON. I was suspicious at first of its quality attributes such as German high-carbon steel construction, solid rosewood handle, and comfortable and efficient design thinking too good to be true at this price. I was happy to be proven wrong in my suspicions in this case and have added this cleaver in my kitchen cutlery arsenal. I'm very happy with this order!

I am very impressed with this high-quality knife. From the moment I unboxed it, the presentation in the included gift box gave it a premium feel, making it just as suitable for gifting as it is for personal use. The knife itself has a fantastic heft��solid and balanced��making it feel dependable and well-engineered in the hand.

The blade arrived extremely sharp, living up to its reputation as a professional-grade cleaver. Whether I��m prepping vegetables or slicing through tougher cuts of meat, the edge glides through effortlessly. It��s been especially effective when dicing fresh produce for stir fry; pairing it with my wok has made weeknight dinners not just easier, but more enjoyable.

It is and it does!

The goods:

It's very well made, the rosewood handle, the full-tank handle, the heavy-in-hand feel, all add to the appeal and the functionality of this knife! It's presented in a REALLY nice box, it's quite the ceremony just to open and experience it! The box is custom-made with high density black foam laser-cut the exact silhouette of this knife...you know you're opening a quality item when you open this box!

It's sharp right out of the box...rare...I didn't do any sharpening before cutting steaks (I cleaned it of course first) and it sliced right through!

It's a high-carbon blade so don't let this sit in water, don't load it into the dishwasher, use it, clean it, put it away! You're a "real adult" and this is a "real adult" knife...congratulations...nice things take more time.

The bad:

I found one thing...the knife appears to be a Damascus knife, where the metal is folded and folded...it's not. It's laser- etched with a design that, to me, resembles the damascus style knives. I don't know if that was their intention or if it's supposed to be "Waves" on the sea, but to me it's a stylish pattern.

I will get more items from Yotsuba's impressive line-up of quality products in the near future!

Ok, so this arrived yesterday and immediately, like the impatient child I am, I had to test it out. I love the kitchen and cooking so I knew I wanted to give it a test run right out the gates!!

First off, the box is a flip top and not a pry open, which I liked since th pry opens are often too tightly jammed in there and then you spend too reforming the box to get the item out. This one, you simply flip up the side and open, however, be careful as the knife is not secured down. It is pushed into the cut out in the foam provided but if you turn the box sideways or upside down, it will easily fall out. Insert where my largest gripe and annoyance is with this knife. There is no sheath or protective cover for this razor sharp knife. It has the rest of the cutoff foam place on top but nothing to prevent accidental touches of the blade edge. That is a very dangerous game and was not happy to see that. That is why I only gave it 4 stars.

Up next came the feel of the knife in my petite hand as a 5'3 women who has yet to hold items the proper way. It felt secure and full. I didn't fear it slipping or being too bulky. It cut through raw potatoes and raw cabbage heads beautifully! Then we transferred it to my 6'5 husband's giant hands. Miraculously, it sat nicely in there too. The thick blade give him plenty of space to relax his gripe and still have a firm hold on it. If that makes sense. He fancies himself more cultured then me at being a chef since he was a food and Beverage manager in his younger years, so he did a few knife movements and weighing the balance of the knife and motions to test out how the knife handled. I don't trust my clumsy self to do any of those so I stick to doing what I need it to do and putting it far away from me when not in use. He commented that it had a good weight to it and looked incredibly sharp. This is the first cleaver we have ever bought for our house a d I no longer think it'll be the only one. We both give it a thumps up!

The 7�� cleaver arrived VERY well packaged in what could be called a gift box. It also came with a warranty card!

Word to the wise, since there is not sheath, I��d advise using a knife block or like I do, a magnetic wall mount for my favorite knives. This one has now earned a spot on the wall.

Constructed out of heavy duty carbon steel, the edge on this 7�� cleaver is pristine. I��d expect that level of quality on a knife much more expensive. It also has a good balance and nice weight to it. The rosewood handle provides a great grip. Back to the blade, it��s razor sharp. I put it to the test and had some meat that needed cutting up. Pork chops (bone in and boneless), ribs and steaks and a large roast. I expected a little struggle getting through the bone but with little effort, it went right through. I checked the blade and no damage or nicks were found. I don��t know if it��s supposed to be used to that extent, but it worked. I went through 30 lbs of meat all together and had no issues. I also tested it on vegetables including a tomato, peppers, onion and cucumber. The weight of the blade starts the cut. I could just drag it across most of the veggies and it did the work. I really didn��t expect that quality out of a knife priced so low. Needless to say, I��m pleasantly surprised. We will see how long before it needs a good sharpening and I��ll report back in a few months.
