This looks like a very high-end knife, but the price makes it very affordable. Cuts through steak and meat effortlessly, and I love the wood handle (If it's not wood, it sure feels and looks like it is), smooth and comfortable to grip. Comes with a gift/storage box, which is good for storage but not very practical for everyday use. The blade shape makes works well with meat, but a bit awkward feeling with some veggies.

Wish it came with a better blade sleeve. This knife is the definition of sharp, and isn't something I'd just throw in a drawer. A more practical sleeve would make it safer to keep with my other knives. Definitely should keep out of reach of children (but that goes for all knives in general).

Overall, great for meat, decent for general use, looks good and affordable. 4 out of 5 stars.

The first thing I noticed is this blade is a lot longer than I expected. My other boning and fillet knives are over an inch shorter, so be sure to check out the dimensions to make sure this is the size you want. The second is how almost all of the weight is in the handle. This makes it more maneuverable but takes a little bit of getting used to. And then you cannot miss the looks. It comes in a very nice gift box, and the rosewood handle is a thing of beauty. The blade has an etched design and even the single rivet in the handle has a design on it. For a gift, this is perfect. But it is not the type of fish knife you will want to throw into your tackle box. And for utilitarian purposes I wish it came with a sheath or blade protector instead of the fancy gift box.

The blade is sharp, VERY sharp, and has stayed that way after a month of use and misuse. I have a variety of knives and I keep them sharpened and use a steel regularly, but I find myself reaching for this one when one of the others starts to drag. It is not designed for cutting tomatoes, but it sure slices easily. And those plastic takeout food containers? It makes quick work of separating the top from the bottom. That is what I mean about misusing it, but it has held up well. I don��t fillet large fish, where the longer blade would be essential, but it serves me well as a boning knife. I have large hands, and the handle fits very comfortably once you get used to the balance point being about a third of the way back into the handle. The full tang expands into an end cap on the heel of the handle that is both aesthetic and utilitarian. The blade is nicely tapered from relatively thin at the handle to very thin at the tip, as you would expect for a fillet knife. Overall, a very good design and execution for the intended purpose!

This fillet/boning knife from YOTSUBA is a work of art!

The full-tang knife arrives, accompanied by a Warranty Card and a small "General Information" sheet, well packaged in a presentation-quality box (see photo).

The knife, itself, is pleasing, visually (see photo), and feels very natural in the hand. The balance point is about 1.5 inches aft of the hilt and this, in my use, helps with control in intricate de-boning operations, as does having the precise amount of blade flexibility needed for those. The keen edge and the very thin blade also make cutting fish an easy task. The only change I'd make - and it's just cosmetic - would be to eliminate the laser-etched "faux Damascus" pattern. I love the rosewood handle. It adds another level of beauty to this knife.

Out of the box, this thing is wicked sharp! In my, thus far, limited use, this knife has retained its edge very well, remaining as sharp as when I first unboxed it with just the usual honing.

This fillet/boning knife is a great value and I'm happy to recommend it.

Since receiving this knife, I've used it to cut meat, fish, and pork with ease. The blade itself is weighted / balanced nicely and very comfortable to hold in one's hand for periods of time without fear of slipping (either from the blade giving any resistance or the grip on the handle). Came out of the box very sharp and has held an edge well since then. I've resharpened it once recently which was easy and it cuts as well as it did right out of the box. It's relatively easy to clean, it needs to be hand washed and dried to ensure the wood stays intact.

Overall a very quality knife for a reasonable price, makes it a viable option for an amateur/home chef looking for a nice knife without breaking the bank.
